I made a tapioca Thai dessert one night. I had a similar dessert one hot, muddy night in Isaan about fifteen years ago — my father and I walked through puddles and across skiny bamboo bridges to someone’s house — a teak, stilt house, with the walls of the upstairs only being about two feet high. We sat on low benches that were built along the wall, the bugs came sailing in and gathered around the lights, and we were served a delicious coconut based dessert with all sorts of interesting toppings.
